THE KING OF CHEESES

We present you a product having no equals in genuineness, a complete food, with strong nourishing properties, not frightened of any confrontation with other cheeses.
The production area goes from the province of Mantua (at the right of the river Po) to the province of Bologna (at the left of the river Reno); on deduce that, if the territory affects the product, we will have different qualities of product. In the area surrounding Bibbiano, “the cradle of Parmigiano-Reggiano”, the territory still presents some very rare perennial meadows.
This meadows, rich of different typologies of herbs, kept intact since unmemorable times, feed the cattle of this area. Here the Parmigiano Reggiano, integral part of the population’s culture, has never to be served if it’s less than two years aged. After thirty months of ageing it reaches its height, overall if used as excellent ingredient of the typical recipes of this area.
Sweet and never spicy, the colour vary from straw-yellow, typical of summer productions when the cattle is fed with fresh forage containing betacarotene, to white. It has always to be bought in slices, with its own rind on which there must be printed the typical “Parmigiano Reggiano” logo certifying the origin. The dairy farm which supplies us this precious product since many years is situated not far from our location and is has been conferred of the prestigious international certification ISO 9002. This certification is obtained only after severe controls attesting the quality of the whole production process.
With real pleasure we have come up against the amazement of people tasting for the first time this product! But…..the hardest heat we have overcome is the one against locals, just here where the “furmaj” (the local dialect for cheese) is a cult.
