It is produced using selected lean pork, adding 15% maximum of fat. The diameter of this salami is little and the paste is obtained by a large grinding, adding a moderate quantity of spices. It is made into sausages using fine gut.
Manually bound with cord, it must season for 50 -60 days minimum. The colour is strong red with very white fat spots. It is similar to salami “Felino” but the taste is sapid, rustic, fresh and more marked. It is the typical salami of Reggio Emilia’s tradition, where flavours are more marked.
