The Balsamic Vinegar of Modena is made by alcoholic and acetic fermentation of grape juice from different varieties of grapes, eventually submitted to partial fermentation or also concentrated by direct fire, eventually adding other ingredients.
The regulation of the consortium doesn’t place bonds regarding the area of production. The quality of this product will depend mostly on the ageing.
The regulation doesn’t compel producers to age the vinegar in wooden barrels, but imposes that a part of vinegar rests for a brief period in barrels, until it reaches an acidity of 6% minimum. The vinegar we propose is produced in our provincial area using Trebbiano grapes cultivated in Emilia.
It is dense, with bitter-sweet taste, aged 4 years in barrels, as the producer declares on the technical sheet of the catalogue (it is forbidden by the Law to declare the ageing on the label). This maturation gives the vinegar, compared to many other balsamic vinegars of Modena, a darker colour, more aromatic perfumes and a sweeter flavour.
